Spicy Lemongrass Chicken Marinade
Ingredients
- 1/2 cup flavorless oil
- 1/2 cup fish sauce
- 1 Tablespoon kosher salt
- 4 lemongrass stalks
- 1 small bunch cilantro, top leaves saved for garnish
- 1/4 cup palm sugar
- 1/4 cup black peppercorns
- 3 Tablespoons soy sauce
- 2 Tablespoons coriander seeds
- 8 garlic cloves
- 6-8 fresh Thai chiles
- 4 lbs boneless, skinless chicken thighs
Directions
- Put everything except the chicken in a blender and blend until smooth.
- Cut the chicken into cubes, add the marinade.
- Refrigerate for 12-72 hours.
- Pan sear or thread onto skewers and grill until cooked to 165F.
