Spicy Lemongrass Chicken Marinade

 

Ingredients

  • 1/2 cup flavorless oil
  • 1/2 cup fish sauce
  • 1 Tablespoon kosher salt
  • 4 lemongrass stalks
  • 1 small bunch cilantro, top leaves saved for garnish
  • 1/4 cup palm sugar
  • 1/4 cup black peppercorns
  • 3 Tablespoons soy sauce
  • 2 Tablespoons coriander seeds
  • 8 garlic cloves
  • 6-8 fresh Thai chiles
  • 4 lbs boneless, skinless chicken thighs
Directions
  1. Put everything except the chicken in a blender and blend until smooth.
  2. Cut the chicken into cubes, add the marinade.
  3. Refrigerate for 12-72 hours.
  4. Pan sear or thread onto skewers and grill until cooked to 165F.
