Peach Tomato Salad

This is going to be a short post as it is in proportion of the amount of time it takes to make this salad. Which is basically nothing. 


Actually, I will stop to say that this is a delicious savory fruit salad and a little out of the box. It's perfect for when you have too many tomatoes and need to eat them. Or you want a change from your normal salad. 

You should definitely use home grown tomatoes. If you have none (like me because you don't have space for a garden) and can't convince a neighbor of co-worker to part with their overabundant crop, then get some heirloom tomatoes. It's all about the flavor. 

If you get boring tomatoes this will taste like cardboard. 

That may be overstating it (just a bit) but the idea stands. Good ingredients = good flavor. Duh.
You can also substitute nectarines if they look better than the peaches. Or you hate peach fuzz. Both will be tasty.

After putting on your trusty apron, slice up your fruits and the onion. Put it in a bowl.


In a small bowl, combine together vinegar, olive oil, hone, salt and pepper. I threw in a touch of red pepper flakes for a tiny kick. Your choice.


Drizzle the dressing over the salad and toss. Top with feta and serve.

It takes under 10 minutes and is perfect for some summer heat.


Peach and Tomato Salad

Ingredients

  • 1/3 of a red onion, thinly sliced
  • 1/2 lb ripe peaches, pitted and cut into wedges
  • 1/2 lb ripe tomatoes, mix of heirloom and cherry
  • 1 tablespoon white wine vinegar
  • 1/2 tablespoon extra virgin olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 1/4 cup crumbled feta

Instructions

  1. In a large bowl, combine onions, peaches and tomatoes.
  2. In a small bowl, whisk together vinegar, oil, honey, salt, and pepper. Drizzle over fruit and toss.
  3. Top with feta and serve.
