Akra (Fried Taro Fritters)
Ingredients
- 1 lb taro root, peeled
- 4 scallions, thinly sliced
- 3 garlic cloves
- 1 habanero pepper, finely chopped
- 1 large egg, beaten
- 1 large handful of parsley, finely chopped
- 2 teaspoons kosher salt
- 1/2 teaspoon ground black pepper
- Flavorless oil for frying
Directions
- Grate taro root as finely as possible into a bowl with a lid.
- Add all the other ingredients. Mix well.
- Heat oil to 375F.
- Form thin fritters (shape them on the blade of a knife) and fry until golden brown, ~3 minutes, flipping as necessary.
- Eat immediately. Serve with lime juice and pikliz.
Mixture can be refrigerated for up to 3 days.
