Akra (Fried Taro Fritters)

 


Ingredients
  • 1 lb taro root, peeled
  • 4 scallions, thinly sliced
  • 3 garlic cloves
  • 1 habanero pepper, finely chopped
  • 1 large egg, beaten
  • 1 large handful of parsley, finely chopped
  • 2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • Flavorless oil for frying
Directions
  1. Grate taro root as finely as possible into a bowl with a lid.
  2. Add all the other ingredients. Mix well.
  3. Heat oil to 375F.
  4. Form thin fritters (shape them on the blade of a knife) and fry until golden brown, ~3 minutes, flipping as necessary. 
  5. Eat immediately. Serve with lime juice and pikliz.
Mixture can be refrigerated for up to 3 days.
