Breakfast of Champions

Everyone knows that the only meal better than brunch is second breakfast. However, not everyone is acquainted with the joys of having not one, but two breakfasts. So, I will keep it simple and say that your life will be forever improved if you eat a normal breakfast. And then a few hours later, eat a second one. Wow.

In the event that you are thinking about a hot breakfast the first (or second) time around, feeding a crowd in the morning, or a delightful brunch with minimal work, consider this as an option.


It's a great dish. It encompasses a variety of breakfast favorites. It can be made ahead of time. It keeps warm well. It can be adapted for a pork-less or meat-less crowd easily. But don't try to feed this to your lactose intolerant friends...  I'm not a fan of fake cheese in any way.

A brief practical note: this is easy to make the night before. Refrigerate overnight. Bake in the morning. Keep warm in the oven for anyone who sleeps in late.

If you're not yet sold, first I'm not sure why you're still reading into paragraph 5. But if I've for some reason earned your trust, let me say this last little bit. This breakfast casserole reheats like a dream. You can make one on a Saturday and eat it all week. Unless you're planning on sharing with anyone else. In which case you can eat it for a day or two. It's that delicious.

Time to start. Throw on an apron and prepare yourself how simple this is.


In a medium skillet, brown sausage. You can use turkey or pork sausage. Both are equally delicious.


While it cooks, bust the biscuits out of the tube and cut them into 4-6 pieces each. Spray a 9" x 13" pan and arrange them in the bottom.



The sausage is probably brown and cooked by now. Drain the grease and sprinkle over the biscuits.

Throw some cheese on top.



Crack the eggs in a medium bowl and mix with milk, salt and pepper. Pour over the cheese.


Heat water to boiling in a kettle, pot, or microwave. Pour in the gravy mix and whisk until smooth and thick.


Pour on the top.

Bake.

Eat.


Biscuit and Gravy Breakfast Casserole

Ingredients

  • 1 16 oz can refrigerated biscuits
  • 1 lb spicy pork sausage
  • 2 cups shredded cheddar cheese
  • 6 eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 2.75 oz packet of gravy mix
  • 2 cups boiling water

Instructions

  1. Preheat oven to 350 F. Spray the bottom of a 9x13 baking dish with oil.
  2. Cut each biscuit into 6 pieces and layer in the bottom of the baking dish.
  3. In a skillet, brown the sausage, breaking into small pieces. Drain off grease and layer on top of the biscuits.
  4. Top sausage with half of the cheddar cheese.
  5. In a medium bowl, whisk together eggs, milk, salt and pepper. Pour on top of the cheese.
  6. Make gravy according to package directions. Basically, whisk gravy powder into boiling water until smooth.
  7. Pour gravy over egg mixture. Top with remaining cheese.
  8. **Can be refrigerated overnight at this point and baked in the morning.
  9. Bake for 30 minutes until golden brown on top.
