Pikliz (Haitian Spicy Pickled Veg)
Ingredients 1/2 head green cabbage, thinly sliced 1 large white onion cut into thin half moons 1/4 cup kosher salt 2 medium carrots, peeled and julienned 8 habaneros, thinly sliced 2 large shallots, thinly sliced 1 cup white vinegar 1 cup lime juice Directions Mix everything together and leave at room temperature for 20 minutes, stirring occasionally. Pour into airtight containers and refrigerate for at least 1 day. Best within the first 6 months. Adapted from Gregory Gourdet's Everyone's Table
